Hot cocoa with almond milk (Vegan)

Enjoy this delicious Non- Dairy hot cocoa this holiday season......

You can make your own almond milk or pick some up at the super market. To make almond milk you need to soak 1cup almonds in 3 cups of warm water overnight. Put it in a blender and then strain through a cheese cloth or strainer. Use the almond pulp to thicken gravy or to add to a cookie recipe.

Ingredients:Serves 4

  • 4 cups unsweetened almond milk (home made or store bought)
  • 2 cinnamon sticks, split lengthwise
  • 1/4 cup unsweetened natural cocoa powder
  • 2 ounces chopped dark chocolate
  • 1/4 cup granulated sugar
  • 1/4 teaspoon coarse salt
Bring milk and cinnamon sticks to a boil over medium heat. Reduce heat, and simmer gently for 10 minutes. Remove cinnamon sticks, rinse, and reserve.
Whisk in cocoa, chocolate, sugar, and salt, whisking vigorously until mixture is foamy, 1 to 2 minutes. Divide among mugs. Garnish with cinnamon sticks.
