Best Vegetables for juicing




What type of Vegetables to Juice? What are the best vegetable juice recipes?
We recommend starting with the vegetsbles that are easiest to juice and to tolerate:

  • Celery
  • Fennel (anise)
  • Cucumbers
  • Carrots
These vegetable are beneficial to help you start getting used to juicing vegetables.
The more intense dark green vegetables are probably the best to juice. You could make combinations of green vegetables with carrots.Do remember that carrot juice has a lot of sugar in it. If you are diabetic you would need to be especially cautious about carots and beets and other root vegetables.

The green vegetable juices:


The easiest green vegetables to juice are lettuce. They definitely are more palatable than other vegetable juices. Use organic green leafy vegetables only.

  • Red leaf lettuce
  • Green Leaf lettuce
  • Romaine lettuce
  • Escarole
  • Spinach
  • Endive


If you are new to juicing you definitely want to hold off on these until you get used to the above as they are more challenging vegetables to consume, but they are highly beneficial:
  • Kale
  • Collard Greens
  • Dandelion Greens
  • Mustard Greens (bitter)


Some other vegetables include:

  • Cabbage
  • Chinese Cabbage
  • Bok Choy
(Again crucifers like these may be hard to tolerate for some people . So start of with small amounts of vegetable juice and see how you do. )
Herbs also make wonderful combinations and there are two that work exceptionally well:

  • Parsley
  • Cilantro ( some people may find it hard to tolerate)
Root vegetables:
Carrot or beet juice are root vegetables which make most juice palatable because they are high in sugar content. They may raise insulin levels if consumed in large quantities. If you are diabetic you should avoid them. Never use more than 1/4 medium sized (2 oz) beet in any 1 glass of juice. Excessive use of beets could cause hives or even give chills or a fever. (Never drink beet juice by itself either).


Rotate Your Vegetables. Use different vegetables in the juices. 
This helps with getting a broad range of nutrients.
